Moong (or mung) beans are similar in texture to firm lentils, like French Puy or green lentils. They are used in a variety of ways in different cuisines; in curries or dhal in South Asia, in pilaff-like dishes in the Middle East and even used in ice creams and deserts in East Asia.
When sprouted they produce the bean sprouts we most commonly see in supermarkets and in stir fries.
To cook; boil until tender.
