Polenta is a great store cupboard staple and is very versatile. This rich yellow flour, or 'meal' is made of ground corn, which gives it the distinctive colour and slightly sweet taste.
It can be made thick and creamy by stirring into stock. Or make polenta chips by leaving it to set, then cutting into chips to be fried or baked. Polenta can also be used in sponges and deserts in place of standard flour or as part of a blend.
